The Dish 

A fajita for breakfast? You bet! Inspired by those sizzling, restaurant-style fajitas, we recreated a simplified version perfect for busy weekday mornings — complete with prep-ahead options for even more time savings. Instead of a tortilla, we created this open-faced omelet concept. The omelet is filled with seared and seasoned ground turkey as well as sauteed peppers and onions. A little salsa, low-fat yogurt, and scallions complete the fajita aesthetic. If you would like to make this breakfast fajita vegetarian, feel free to substitute the turkey for your favorite ground meat alternative (or crumbled tofu). 

Prepping Ahead/Time-Saving Tips

The ground turkey and veggies (peppers and onions) can be cooked and chilled a day or two in advance. While the eggs are cooking, reheat the turkey and veggie mixture in the microwave (or in another skillet), then assemble as instructed.

Preparation Instructions

Step 1: Lightly grease a nonstick skillet with pan release spray and preheat over medium-high heat.

Step 2: Once hot, crumble ground turkey into the skillet and sprinkle with taco seasoning, stirring to combine. Cook for 3-4 minutes, stirring occasionally, or until cooked through and nicely browned. Once cooked, using a slotted spoon, remove the turkey from the skillet and set aside on a plate.

Step 3: Lightly grease the skillet once more and return to medium-high heat. Add the peppers and onion and cook for 3-4 minutes or until tender.

Step 4: Once the veggies are tender, return the ground turkey to the skillet and toss to combine. Using a slotted spoon, remove the veggies and ground turkey from the skillet, set aside on the plate, and lightly season to taste with salt and pepper.

Step 5: Return the skillet to medium-high heat. Once hot, add the eggs and swirl to coat the bottom of the skillet.

Step 6: Cover and cook for 2-3 minutes or until the egg is firm and cooked through. Carefully remove the egg from the skillet and transfer to a serving plate.

Step 7: Top the egg with the ground turkey, veggies, and salsa. Dollop with yogurt and sprinkle with scallions before serving.
